Ingredients

  • 800 g small, new potatoes
  • 500 g small, white mushrooms
  • 1 collar (approx. 120 g) Spring onions
  • 100 g streaky smoked bacon
  • 3-4 Tbsp Oil
  • 1 TABLESPOON Sugar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 200 ml Vegetable broth (instant)
  • 4 TABLESPOONS Essig White Balsamic
  • 1 small onion
  • 500 g mixed minced meat
  • 2-3 TABLESPOONS Breadcrumbs
  • 1 Egg yolk (size M)
  • 2-3 TABLESPOONS coarse steak pepper
  • 7-10 Tbsp Oil

Directions

    Wash the potatoes thoroughly, cover and cook in plenty of boiling water for 15-20 minutes. Wash and clean the mushrooms. Clean and wash spring onions and cut them into rings, except for something to garnish. Dice bacon. Drain potatoes, rinse with cold water and peel.

    Leave the bacon in a pan until crispy and take it out. Put oil into the hot pan, add mushrooms and fry for about 5 minutes while turning. Finally add sugar and caramelise for about 1 minute while turning. Season mushrooms with salt and pepper and deglaze with stock and vinegar. Add spring onions and bacon and bring to the boil briefly. Pour hot marinade over the potatoes and leave to stand for approx. 1 hour and let cool off. In the meantime, peel and finely dice the onion for the pepper mince steaks. Put the minced meat, onion, breadcrumbs and egg yolk in a bowl. Season with salt and a little pepper. Form 8 flat minced steaks and turn the edges in the steak pepper.

Season the boiled potato salad with salt and pepper again and serve with the pepper steaks. Garnish with spring onions
