Ingredients

  • 120 g Whole spelt flour
  • 140 g Spelt flour
  • 1 1/2 TSP. Baking Powder
  • 1/2 TEASPOON Baking soda
  • 1 untreated orange
  • 1 Egg
  • 150 g demerara sugar
  • 80 ml Rapeseed oil
  • 200 ml Buttermilk
  • 200 g Blueberries

Directions

    Wash the orange and rub the peel. Mix all dry ingredients together (including the orange peel).

    Stir the wet ingredients and mix only very slightly with the dry ones.

    Carefully fold in the blueberries so that they do not break. Frozen goods can also be used and then fold in frozen. Preheat the oven to 180°C/circulating air and place the muffins in a muffin pan lined with paper sleeves.
