Season crème fraîche with salt and pepper. Wash, clean and slice the tomatoes. Unroll the dough and lay it on the baking paper on a baking tray. Spread crème fraiche on top and smooth it down.
Top with ##tomatoes## and bacon. Bake in the preheated oven (electric cooker: 225 °C/ convection oven: 200 °C/ gas: level 4) for 13-15 minutes. Wash the rocket, shake dry and cut into small pieces, except for a little garnish.
Cover tarte flambée with rocket, cut into triangles and garnish with remaining rocket.
