Black salsify salad

Ingredients

  • 300 g Broccoli
  • 1 bundle (500 g) Black-
  • 7-10 Tbsp roots
  • 6-7 TABLESPOONS White wine vinegar
  • 50 g streaky smoked bacon
  • 1 TABLESPOON Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp black pepper
  • 1 small head radicchio
  • 1/2 bunch Chives
  • 7-10 Tbsp parchment paper

Directions

    Clean and wash the broccoli, divide into florets and place in a microwave oven with three tablespoons of water. Cover with damp parchment paper and cook covered at 600 watts for four minutes. Brush the black salsify vigorously under cold running water, peel and place in vinegar water so that the vegetables do not discolour. Cut at an angle into slices one centimetre thick. Cut the bacon into cubes and microwave it at 600 watts for two to three minutes until crispy.

    Add black salsify, oil, two to three tablespoons of vinegar and two to three tablespoons of water and cover with damp parchment paper. Cover additionally and cook at 600 watts for six minutes. Fold in broccoli, season with salt and pepper and allow to soak. Clean and wash the radicchio and spread it on three plates. Arrange black salsify salad lukewarm on top. Wash the chives and pat dry. Put something aside for garnishing. Cut the rest into small rolls and sprinkle on the salad. Garnish with the rest of the chives and serve immediately.
