Quickly work the sugar, butter in flakes, flour, egg and hazelnuts with your hands to a smooth dough. Wrap in foil and put in a cool place for at least 30 minutes. Make a Santa Claus template (approx. 30 cm high, 27 cm wide). Roll out the dough on a floured work surface 3-4 mm thin. Place the template on the dough and cut it out with a sharp knife. In the meantime, beat the egg white and 3 tablespoons of water until stiff. Stir in icing sugar. Take off about 1/3 and put about 2 tablespoons of it into a small freezer bag. Stir the remaining white icing with a little water until spreadable. Take off another 1/3 and colour red. Divide the remaining third and colour yellow, green and brown (with cocoa). Paint Santa Claus, stars and Christmas trees with it. Cut a small corner from the freezer bag and spray the beard.
