Beans, pears and bacon

Ingredients

Servings: 4
  • 2 Onions
  • 500 g Bacon
  • 1/2 TEASPOON black peppercorns
  • 1 kg French beans
  • 1 savory bunch
  • 4 Pears (e.g. William pears)
  • 1 coated tablespoon of cornflour
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper

Directions

    Onions peel and cut into slices. Add the bacon and peppercorns to 3/4 litre of boiling water. Cook in a closed pot at medium heat for 30 minutes. Clean, wash, cut or break the beans and add to the bacon. Wash the savory, put 2/3 aside for chopping and garnishing.

    Tie the rest with kitchen string to a bunch and lay it on the beans. Simmer for another 15 minutes. In the meantime wash and halve the pears. Place on the beans and cook covered for another 5-10 minutes. Remove the bacon, pears and savory bunch. Stir starch in a little cold water until smooth, pour into the pot and thicken the stock slightly. Season to taste with a little salt and pepper. Cut bacon into slices. Finely chop half of the remaining savory.
