Ingredients

  • 250 g Butter or margarine
  • 175 g Sugar
  • 2 packages Vanillin sugar
  • 5 Eggs (size M)
  • 7-10 Tbsp grated rind of 1/2 untreated lemon
  • 1 package Rum-back
  • 40 g crushed almonds
  • 125 g Flour
  • 125 g Cornstarch
  • 7-10 Tbsp Grease
  • 450 g Dark chocolate coating
  • 150 g Whole milk couverture
  • 50 g Icing sugar
  • 100 g Marzipan raw mass
  • 7-10 Tbsp golden sugar pearls
  • 1 TABLESPOON Icing sugar to roll out
  • 1 small freezer bag

Directions

    Cream fat, sugar and vanillin sugar. Separate eggs. Add the egg yolks bit by bit and stir until the cream is frothy. Stir in lemon zest, rum bake and almonds. Mix flour and starch, sieve onto the cream and fold in. Beat the egg whites until stiff. Carefully stir in half of the mixture, fold in the rest loosely.

    Grease the bottom of a springform pan (26 cm Ø). Spread 2 tablespoons of dough on top. Bake under the preheated grill (not too high) for about 1 minute until golden brown. Spread 2 tablespoons of the dough on the baked base and push it under the grill. Bake the rest of the dough in the same way (makes 12-15 layers). Carefully loosen the edge of the springform pan and let the Baumkuchen cool down. Use a template to cut out a hexagonal star. Cut sections into triangles, cut in half again crosswise. Coarsely chop the chocolate coating and melt separately on a hot water bath. Let it cool down. Sift icing sugar finely and knead with raw marzipan paste. Roll out marzipan on a little icing sugar, cut two 2-3 cm wide strips and cut out small stars from the rest. Put some dark chocolate in a freezer bag and cut off a small corner.

Put some dark chocolate in a freezer bag and cut off a small corner. Write "Merry Christmas" on the ribbons. Decorate the trees and stars with sugar pearls. Warm up the chocolate coating and cover the cake with the dark chocolate coating. Partially cover the tops of the pyramid cakes with the remaining dark chocolate and the milk chocolate. Allow to set in a cool place. Decorate with marzipan ribbons and stars. Makes 1 cake and about 36 Baumkuchenspitzen
