Balsamic mushrooms with beef fillet medallions, beans and Swedish potatoes

Ingredients

Servings: 4
  • 35 g Hard cheese (e.g. Parmesan or Grana Padano)
  • 1 kg medium size mainly waxy potatoes
  • 7-10 Tbsp Salt
  • 75 g Butter
  • 30 g Breadcrumbs
  • 400 g Porcini mushrooms and rosé mushrooms
  • 500 g green beans
  • 4 Beef fillet steaks (approx. 180 g each)
  • 12 discs Bacon
  • 3 TABLESPOONS Oil
  • 7-10 Tbsp Pepper
  • 2 TABLESPOONS + some sugar
  • 75 ml dark balsamic vinegar
  • 100 ml Vegetable broth
  • 1 TEASPOON Cornstarch
  • 1 Onion
  • 7-10 Tbsp little wooden skewers
  • 7-10 Tbsp Aluminium foil

Directions

    Grate cheese. Peel and wash the potatoes and cut them thinly across without cutting the potatoes (works especially well if you place one or two wooden spoons with round stems next to the potatoes at right angles to the cutting direction and use them as a "border"). Place the potatoes in an ovenproof dish, season with salt. Melt 20 g butter. Drizzle over the potatoes, sprinkle with breadcrumbs and cheese. Place the casserole dish on one half of the baking tray and bake in a preheated oven (electric range: 175 °C/ convection oven: 150 °C/ gas: see manufacturer) for 40-45 minutes

    In the meantime clean and trim the mushrooms, cut large mushrooms smaller if necessary. Clean, wash and chop the beans and cook them in a pot with boiling salted water for 10-15 minutes

    Wash the meat, dab dry. First wrap 1 slice of bacon over the cut sides, then all around with a total of 2 slices of bacon and fix with wooden skewers

    Heat 1 tablespoon of oil in a coated frying pan. Brown the meat in it all around for 4-5 minutes. Season the meat with salt and pepper. 8-10 minutes before the end of the cooking time of the potatoes, place the medallions on the free side of the baking tray and cook until medium rare.

    Add 2 tablespoons of oil to the hot frying fat and heat up. Fry the mushrooms for 4-5 minutes while turning them, season with salt and pepper. Add 2 tablespoons of sugar and allow to caramelize while turning. Mix vinegar, stock and starch, deglaze mushrooms with it, add 25 g butter, simmer for about 1 minute, season with sugar and possibly salt and pepper

    Drain the beans in between and let them drip off. Remove meat from the oven, wrap in aluminium foil and leave to rest in a warm place. Peel and chop the onion. Melt 30 g butter in a saucepan. Sauté onion in it, add beans, stew for about 1 minute, season with salt, pepper and some sugar, remove from the heat. Remove potatoes from the oven, arrange on plates with meat, mushrooms and beans
