Baked potato with tomato salsa, onion, lime and basil

Ingredients

Servings: 4
  • 4 floury cooked potatoes (à approx. 300 g)
  • 4 medium-sized tomatoes
  • 1 red onion
  • 1 collar Basil
  • 1 small clove of garlic
  • 7-10 Tbsp Juice of 1/2 lime
  • 1 pinch Salt
  • 7-10 Tbsp Aluminium foil

Directions

    Wash the potatoes, wrap in aluminium foil and bake in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for approx. 1 1/2 hours. In the meantime wash, clean and dice the tomatoes.

    Peel and chop the onion. Wash basil, dab dry and chop, except for a little bit for garnishing. Peel the garlic and press it through a garlic press. Mix everything with lime juice and season with salt.

    Take out potatoes, wrap them from the foil, cut them lengthwise in the middle until 1 cm before the edge and press them apart. Fill tomato salsa into the potatoes and garnish with some basil.
