Baked apple with Spekulatius and soft apricots

Ingredients

Servings: 1
  • 4 Apples (approx. 200 g each; e.g. Boskop)
  • 75 g Soft Apricots
  • 2 TABLESPOONS Lemon juice
  • 125 g Gewürz-Spekulatius
  • 3-4 Tbsp Apricot Jam
  • 100 g Dark chocolate coating
  • 1 Freezer bag

Directions

    Wash apples and grate them dry. Roughly chop the apricots. Cut a lid off the apples. Hollow out apples with a ball cutter so that only a narrow edge remains. Drizzle apples with lemon juice

    Put the biscuits in a freezer bag and crumble them with the cake roll. Mix the biscuits, apricots and jam and fill into the apples

    Place apples in an ovenproof dish and bake in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 30-40 minutes. Place the apple lids on the apples after half the cooking time. Arrange baked apples on plates

    Melt the chocolate coating over a warm water bath, let it cool down a little. Pour the couverture over the apples and serve immediately
