Wash and quarter the pears and remove the core. Cut pear quarters into very thin slices and sprinkle with lemon juice. Halve the bacon slices. Cut cheese into thin corners. Beat egg white until stiff and fold into the dough in portions
Heat 1/6 of the clarified butter in a small pan (16 cm Ø). Put 2 slices of bacon and 3-4 pear wedges in the pan and let the bacon drain for about 1 minute.
