Bacon pancakes with camembert and pears

Ingredients

Servings: 4
  • 4 Eggs (size M)
  • 200 g Flour
  • 1 pinch Salt
  • 1/2 TEASPOON Sugar
  • 1 knife tip Baking Powder
  • 300 ml Milk
  • 2 small pears (about 125 g each)
  • 1 TABLESPOON Lemon juice
  • 6 discs Bacon
  • 125 g Camembert
  • 25 g clarified butter
  • 4-6 Tbsp gelled cranberries

Directions

    Separate eggs. Refrigerate the egg whites. Mix flour, salt, sugar and baking powder in a bowl. Add egg yolks and milk and mix to a smooth dough. Let dough swell for about 15 minutes

    Wash and quarter the pears and remove the core. Cut pear quarters into very thin slices and sprinkle with lemon juice. Halve the bacon slices. Cut cheese into thin corners. Beat egg white until stiff and fold into the dough in portions

    Heat 1/6 of the clarified butter in a small pan (16 cm Ø). Put 2 slices of bacon and 3-4 pear wedges in the pan and let the bacon drain for about 1 minute. First put about 2 corners of camembert in the pan, then spread about 1/6 of the dough evenly on top. Fry for about 3 minutes at medium heat until golden brown, slide on a lid and turn with the help of the lid. Bake from the second side also until golden brown. Remove from the pan and keep warm. Bake another 5 pancakes from the remaining ingredients in the same way. Serve the pancakes with the cranberries
