For the vinaigrette, peel the ginger and dice very finely. Clean the chilli, cut lengthwise, remove seeds, wash and chop finely. Wash and dry the lemon and grate the peel finely. Halve the lemon and squeeze.
Mix ginger, chilli, lemon peel and juice, vinegar, salt and pepper. Fold in the oil.
For the Tatar, cut the mozzarella into small cubes and mix with approx. 1⁄3 of the vinaigrette. Peel, quarter, core and finely dice the apple. Halve avocado and remove stone. Remove the flesh from the skin and dice finely.
Mix the apple and avocado cubes with the rest of the vinaigrette. Wash basil and shake dry, pluck leaves and cut into fine strips.
Layer mozzarella, basil and avocado mix alternately in four glasses (250 ml each).
