Peel and finely dice the ginger and garlic or press them through a garlic press. Mix vinegar, salt, sambal and some sugar. Beat the oil vigorously into the mixture. Stir in ginger and garlic
Peel and wash the radish and carrot and cut into fine sticks. Clean and wash spring onions and cut them into fine rings. Mix sauerkraut, carrot, radish and spring onions well with the marinade. Leave to stand for about 30 minutes. Season to taste again
