Ingredients

Servings: 2
  • 2 Spring onions
  • 1 red chilli pepper
  • 10 g Ginger
  • 100 g Shiitake mushrooms and mushrooms
  • 1 TABLESPOON Oil
  • 7-10 Tbsp salt, pepper
  • 6 Eggs (Gr. M)
  • 1⁄2 Federation Chives

Directions

    Clean, wash and cut the spring onions into rings. Clean chilli, cut lengthwise, remove seeds, wash and cut into fine rings. Peel and finely chop the ginger. Clean mushrooms, wash and halve if necessary.

    Heat the oil in a large coated pan (with lid). Brown the prepared ingredients in it, season with salt and pepper. Whisk eggs, season and add. Cover and allow to set for approx. 15 minutes over medium heat.

    Wash the chives, cut into small rolls and sprinkle on top.
