Apples au gratin with vanilla cream

Ingredients

  • 1/2 TEASPOON Cinnamon
  • 3 TABLESPOONS + 150 g sugar
  • 4 Apples (e.g. Golden Delicious)
  • 1 untreated lemon
  • 3 Egg yolk (size M)
  • 1 pinch Salt
  • 1 knife tip pulp of a scraped vanilla pod
  • 50 g Flour
  • 1/2 l lactose-free milk
  • 250 g lactose-free whipped cream
  • 7-10 Tbsp Mint

Directions

    Mix cinnamon and 3 tablespoons of sugar. Peel and halve apples, cut out the core. Put apple halves into 1 small ramekin each, sprinkle with cinnamon-sugar mixture, leaving something to decorate.

    Bake in the preheated oven (electric cooker: 225 °C/ convection oven: 200 °C/ gas: level 4) for about 20 minutes. Remove and let cool off. Wash lemon hot, grate dry, peel peel in strips with the peeler.

    Set aside 1-2 strips and use the remaining lemon for other purposes. Whisk the egg yolks and 150 g sugar until creamy with the whisk of the hand mixer. Mix salt, vanilla pulp and flour, stir in. Warm the milk lukewarm.

    Gradually stir into the egg mixture. Put the mixture and lemon zest in a saucepan and simmer, stirring constantly, until it thickens. Remove the lemon peel and continue to simmer for 2-3 minutes, stirring continuously.

    Pour the cream into a bowl and let it cool down briefly. Spread the cream on the apples. Bake in a preheated oven (electric range: 225 °C/ convection oven: 200 °C/ gas: level 4) for 4-5 minutes until golden brown.

    Remove the apples and let them cool down. Cut remaining lemon peel into fine strips. Whip the cream until stiff, squirt into tuffs in the moulds. Sprinkle with remaining cinnamon sugar and lemon peel and decorate with mint.
