Sieve the flour into a bowl. Add salt, eggs and milk and mix everything to a thick pancake batter. Let the dough swell for about 10 minutes.
Peel the apples, stick out the core. Cut apples into slices of about 1.5 cm thickness. Sprinkle with 1 tablespoon of sugar. Mix 2 tablespoons of sugar and cinnamon.
Heat the clarified butter in portions in a pan. Pull apple slices through the dough and bake in portions on each side for about 3 minutes until golden brown. Turn the finished apple rings in the sugar-cinnamon mixture and keep warm. Arrange the apple rings and decorate with mint. Serve with vanilla sauce.
