Apple pancakes with ice cream

Ingredients

  • 4 Eggs (size M)
  • 7-10 Tbsp Salt
  • 1 package Vanillin sugar
  • 200 g Farine (type 550 )
  • 1 coated Tsp Baking Powder
  • 1 package Pudding powder "Vanilla Flavor"
  • 375 ml Milk
  • 400 g Apples
  • 20 g clarified butter
  • 4 (50 g each) scoops of amaretto almond ice cream
  • 7-10 Tbsp sugar, cinnamon and lemon balm

    Separate eggs. Beat the egg yolks, salt and vanillin sugar with the whisks of the hand mixer until foamy. Mix flour, baking powder and custard powder. Sieve onto the egg yolk mixture and stir in. Stir in the milk. Let the dough swell for about 15 minutes.

    In the meantime, wash, peel, quarter, core and slice apples. Beat the egg white until stiff and fold into the dough in portions. Heat 5 g clarified butter in a pan (bottom 20 cm Ø, top 24 cm Ø). Put 1/4 of the dough into the pan, cover each with a quarter of the apple slices and bake until golden on both sides. Bake the rest of the dough in the same way. Serve each pancake with a scoop of ice cream, sprinkled with sugar and cinnamon and decorated with lemon balm.
