Apple pancakes

Ingredients

Servings: 4
  • 3 Eggs (size M)
  • 200 g Flour
  • 250 ml Milk
  • 3 Apples (about 150 g each)
  • 2 TABLESPOONS Lemon juice
  • 1/2 TEASPOON Cinnamon
  • 40 g Sugar
  • 200 g Whipped cream
  • 1 package Vanillin sugar
  • 7-10 Tbsp Salt
  • 2 TABLESPOONS Oil

Directions

    Separate 1 egg. Mix flour, 2 eggs, egg yolk and milk to a smooth dough. Let rest for 15 minutes. Peel apples, core them with an apple corer and cut them into slices. Drizzle with lemon juice.

    Mix sugar and cinnamon. Whip the cream until stiff and allow the vanillin sugar to trickle in. Put it in a cold place. Beat egg whites and 1 pinch of salt until stiff, fold into the dough. Heat 1/2 tablespoon of oil in a pan (16 cm Ø).

    Add a quarter of the dough and spread it in the pan. Place a quarter of the apple slices on top. Fry from one side until golden brown. Turn the pancakes carefully, fry them from the other side until golden brown.

    Keep warm and process the remaining dough and apples in the same way until 4 pancakes are baked. Sprinkle apple pancakes with cinnamon sugar and serve with a dollop of cream.
