Apple-ginger relish for fish skewers

Ingredients

Servings: 4
  • 1 red pepper
  • 150 g Cucumber
  • 3 Onions
  • 2 Garlic cloves
  • 1/4 l apple juice
  • 8-10 Tbsp Cider vinegar
  • 60-70 g Sugar
  • 7-10 Tbsp Salt, Sambal Oelek
  • 3 (approx. 500 g) sour apples
  • 700 g Fish fillet (e.g. redfish)
  • 2 TABLESPOONS lemon juice, 2-3 tablespoons oil
  • 12 wooden skewers

Directions

    Clean and wash the peppers. Wash and peel the cucumber. Peel onions, garlic and ginger. Dice everything finely. Put it in a big pot with apple juice, vinegar, sugar, some salt and sambal oelek. Bring everything to the boil while stirring occasionally and simmer covered over a low to medium heat for about 20 minutes.

    Wash apples, quarter them, remove seeds and cut them into fine pieces. Add and simmer open for 6-8 minutes. Season the relish with salt and sambal, pour hot into prepared glasses, close. Let cool off

    Wash the fish, dab dry. Cut into strips of about 10 cm and put them on skewers in a wavy shape. Sprinkle with lemon juice and season with salt. Fry in hot oil in a large coated pan for 4-5 minutes. Serve with relish. Rice tastes good with it
