Apple-Gin-Biscuit Roll

Ingredients

  • 3 Eggs (size M)
  • 7-10 Tbsp Salt
  • 200 g Sugar
  • 100 g Flour
  • 25 g Cocoa powder
  • 1 1/2 TSP. Baking Powder
  • 3 sheets Gelatine
  • 1 (approx. 200 g) red solid apple
  • 1 TABLESPOON Lemon juice
  • 400 g Low-fat curd
  • 1 package Vanillin sugar
  • 4-5 Tbsp Gin
  • 350 g Whipped cream
  • 7-10 Tbsp Icing sugar
  • 7-10 Tbsp Sugar
  • baking paper
  • 7-10 Tbsp Cling film

Directions

    Separate eggs. Beat the egg whites, 1 pinch of salt and 3 tablespoons of water until stiff, adding 100 g of sugar. Stir in egg yolks. Mix flour, cocoa and baking powder, sieve over the mixture and fold in.

    Spread the mixture evenly on a baking tray (36 x 41 cm) lined with baking paper and bake in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: see manufacturer) for 8-10 minutes.

    Remove the sponge cake from the oven and turn out onto a tea towel sprinkled with sugar. Peel off the paper. Roll the sponge cake with the cloth from the long side and let it cool down.

    Soak gelatine in cold water. Wash the apple, quarter it and remove the core. Cut 3 apple quarters into small cubes. Sprinkle 1 apple quarter with lemon juice and wrap in foil.

    Mix quark, vanillin sugar, gin and 100 g sugar. Squeeze the gelatine and melt it in a small pot. Stir in 3 tbsp. quark, then stir into the remaining quark cream. Chill the cream for about 15 minutes until it starts to gel.

    Whip 200 g cream until stiff. Fold apple cubes and cream into the cream. Unroll the sponge cake. Spread the cream on top. Carefully roll the sponge cake back from the long side. Put the sponge roll in a cool place for about 4 hours.

    Whip 150 g cream until stiff and fill into a piping bag with a small star-shaped spout. Cut apple quarter into thin slices. Decorate the sponge roll with cream and apple slices and chill until serving.

    Sprinkle with icing sugar before serving.
