Apple Crumble

Ingredients

  • 200 g Flour
  • 125 g + 1 tablespoon butter
  • 1 Egg yolk (size M)
  • 100 g + 4 tablespoons sugar
  • 1/2 TEASPOON Cinnamon powder
  • 5 sour apples (about 200 g each)
  • 1/2 Organic Lemon
  • 50 g dried cranberries
  • 50 ml apple juice
  • 1 TABLESPOON Cornstarch
  • 7-10 Tbsp Mint

Directions

    Flour, 125 g butter in flakes, egg yolk, 100 g sugar and 1/2 teaspoon cinnamon first with the dough hooks of the hand mixer, then quickly work into crumbles with your hands. Cover and chill for about 1 hour.

    In the meantime peel and quarter the apples, remove the core and cut the quarters into slices. Wash the lemon hot, grate dry and finely grate the peel. Squeeze the juice. Add lemon juice and peel to the apples and mix.

    Melt 1 tablespoon of butter in a saucepan. Steam the apple pieces and cranberries for about 1 minute while stirring. Add 4 tablespoons of sugar and caramelise for another 2 minutes. Stir apple juice with starch until smooth and add to the apples.

    Bring to the boil briefly. Pour the apple mixture evenly into an ovenproof dish (18 x 24 cm). Spread crumbles over it.

    Bake in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: see manufacturer) for approx. 30 minutes until golden brown. Remove and let cool off lukewarm. Decorate with mint and dust with cinnamon.

    Vanilla ice cream tastes good with it.
