Apple-buttermilk puff pastry strips

Ingredients

  • 225 g frozen puff pastry
  • 1 egg (size M)
  • 1 TEASPOON Milk
  • 3 sheets Gelatine
  • 5-6 rosy-cheeked apples
  • 5 TABLESPOONS Lemon juice
  • 100 ml Buttermilk
  • 50 g Sugar
  • 1 package Vanillin sugar
  • 250 g Whipped cream
  • 7-10 Tbsp Flour
  • baking paper

Directions

    Place puff pastry slices next to each other on a floured work surface and allow to thaw. Moisten the puff pastry slices, place them on top of each other and roll out into a rectangle (25 x 20 cm) on a floured work surface. Cut off 3 strips (2 x 25 cm). Cut one strip in half crossways. Separate the egg. Coat the edges of the large pastry sheet with egg white, place the strips on top and press down a little.

    Prick the pastry base several times with a fork and place it on a baking tray lined with baking paper. Mix egg yolk and milk and brush the edges of the dough with it. Bake in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for approx. 20 minutes until golden brown. In the meantime soak the gelatine. Peel apples all around with a kitchen knife so that long strips are formed. Sprinkle the strips with 2 tablespoons of lemon juice. Grate 1 apple (use the remaining apples for other purposes). Mix buttermilk, 3 tablespoons of lemon juice, sugar and vanillin sugar. Whip cream until stiff. Fold the whipped cream and grated apple into the buttermilk mixture. Dissolve the gelatine.

    Sprinkle the strips with 2 tablespoons of lemon juice. Grate 1 apple (use the remaining apples for other purposes). Mix buttermilk, 3 tablespoons of lemon juice, sugar and vanillin sugar. Whip cream until stiff. Fold the whipped cream and grated apple into the buttermilk mixture. Dissolve the gelatine. Mix with 2 tablespoons of the mixture and stir into the remaining mixture. Take the puff pastry out of the oven and let it cool down on a cake rack for about 10 minutes. Spread buttermilk mixture on the puff pastry strip. Turn the apple peel into florets and put them into the mixture. Chill for about 30 minutes.

    Mix with 2 tablespoons of the mixture and stir into the remaining mixture. Take the puff pastry out of the oven and let it cool down on a cake rack for about 10 minutes. Spread buttermilk mixture on the puff pastry strip. Turn the apple peel into florets and put them into the mixture. Chill for about 30 minutes.
