Apple and potato rösti with herb quark

Ingredients

  • 5 Stem(s) Parsley
  • 400 g Low-fat curd
  • 6 tablespoons (10 g each) low-fat milk
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 kg Potatoes
  • 3 (à 200 g) Apples
  • 3 Stem(s) Marjoram
  • 2 Eggs (size S)
  • 3 tablespoons (10 g each) Oil
  • 7-10 Tbsp Salad leaves and parsley

Directions

    Wash and chop the parsley. Mix quark, milk and parsley. Season with salt and pepper. Peel, wash and roughly grate the potatoes. Wash, quarter and core apples. Grate 2 apples as well.

    Cut the remaining apple quarters into slices. Wash and chop the marjoram. Mix grated potatoes and apples, eggs and herbs. Season with salt and pepper. Heat oil in portions in a large pan.

    Add the potato mixture by the spoonful, press a little flatter. Fry for about 3 minutes on each side, remove. Add apple slices to the frying fat and fry briefly. Season the quark if necessary. Arrange the Rösti, apple slices and quark in portions, garnished with salad and parsley.
