Aperol spray jelly with apricots

Ingredients

  • 300 g Apricots
  • 500 ml Prosecco
  • 250 ml Aperol (Italian bitter liqueur)
  • 7-10 Tbsp Juice of 1 lemon
  • 1 package (1 kg) Gelling sugar 1:1

Directions

    Wash the apricots and carve them crosswise with a knife. Place in boiling water for about 1 minute, rinse with cold water and peel the skin. Halve the fruit, remove stones. Cut the flesh into small cubes

    Put the apricots with prosecco, aperol, lemon juice and jam sugar in a large pot. Bring to the boil while stirring over high heat. Let simmer for about 6 minutes (jelly test!) while stirring constantly. Pour immediately into clean, dry twist-off glasses. Close them and put them on the lid for about 5 minutes. Turn over again and let cool off
