Young vegetables in sesame butter sauce

Ingredients

  • 100 g Butter
  • 750 g Kohlrabi
  • 500 g Carrots
  • 750 g patate novelle
  • 7-10 Tbsp Salt
  • 3/8 l Vegetable broth
  • 2 tablespoons (approx. 20 g) Sesame seeds
  • 7-10 Tbsp white pepper

Directions

    Dice butter and chill. Clean and wash the kohlrabi and carrots. Put small kohlrabi leaves aside. Cut kohlrabi into sticks, carrots diagonally into slices. Wash the potatoes, scrape if necessary.

    Cook in little boiling salted water for 15-20 minutes. Bring the stock to the boil, steam the kohlrabi and carrots for about 10 minutes. In the meantime roast sesame seeds in a dry pan. Drain vegetables and keep warm.

    Bring the vegetable stock back to the boil and boil down until only 1/8 litre is left. Stir in cold butter and season to taste with salt and pepper. Add sesame seeds and pour over the vegetables. Finely chop larger kohlrabi leaves.

    Arrange vegetables and potatoes on plates. Sprinkle with kohlrabigrün and garnish with the small leaves.
