Ingredients

  • 500 g Apples
  • 175 g Sugar
  • 250 g Flour
  • 1 TEASPOON Dry yeast
  • 1 1/2 (each 200 g) Cup of whipped cream
  • 1 egg (size M)
  • 1 Egg Yolk
  • 1 pinch Salt
  • 1 kg white cooking fat for frying
  • 7-10 Tbsp Flour

Directions

    Cut apples into quarters, peel and cut out the core. Cut apples into pieces and put them together with 50 g sugar and 50 ml water into a pot and bring to the boil. Cook at low heat, stirring occasionally, for about 15 minutes at low heat to compote. Let cool off. For the yeast legs, mix flour, yeast and 75 g sugar.

    Heat 100 g cream slightly and add it together with the egg, egg yolk and salt to the flour. Knead with the dough hooks of the hand mixer for about 5 minutes to a smooth dough. Cover the dough and let it rise in a warm place for about 30 minutes. Heat the cooking fat in a high pot or deep fryer to 180 °C. Roll out the dough on a lightly floured work surface to a thickness of 5-6 mm and cut out small squares (3.5 x 3.5 cm) using a dough extractor. Fry the yeast legs in portions in hot fat until golden brown. Remove with a skimmer and sprinkle with remaining sugar while still warm. Whip the remaining cream until stiff and fold in the apple compote. Serve together with the yeast legs.

    Roll out the dough on a lightly floured work surface to a thickness of 5-6 mm and cut out small squares (3.5 x 3.5 cm) using a dough extractor. Fry the yeast legs in portions in hot fat until golden brown. Remove with a skimmer and sprinkle with remaining sugar while still warm. Whip the remaining cream until stiff and fold in the apple compote. Serve together with the yeast legs. Makes 35-40 pieces
