Wood chips with cauliflower and feta-mint yoghurt

Ingredients

  • 100 g creamy feta
  • 200 g Greek yoghurt (10 % fat)
  • 4 TABLESPOONS Milk
  • 4-5 Stem(s) Peppermint
  • 1 ripe pomegranate
  • 1 Garlic clove
  • 400 g minced beef
  • 1 Egg (Gr. M)
  • 2 TABLESPOONS Harissa (chili spice paste; tube)
  • 4 TABLESPOONS Breadcrumbs
  • 7-10 Tbsp salt, pepper
  • 1⁄2-1 Tsp Cumin
  • 1 Cauliflower
  • 4 TABLESPOONS Olive oil

Directions

    For the mint yoghurt mix feta, yoghurt and milk. Wash the mint, shake dry, pluck off the leaves, cut into small pieces and stir in.

    For the chips, peel the garlic, chop it coarsely and crush it with a fork. Knead minced meat, egg, harissa, breadcrumbs and garlic. Season with approx. 1⁄2 TL salt and cumin.

    Form wood chips into about 16 flat chips.

    Clean and wash the cauliflower and cut it into small florets from the stalk. Cut larger florets into thin slices. Heat 2 tablespoons of oil in a large frying pan. Fry the cauliflower for 10-15 minutes while turning.

    Season to taste with salt and pepper.

    Heat 2 tablespoons of oil in another large frying pan. Fry the wood chips for 3-4 minutes on each side in portions. Arrange cauliflower with mint yoghurt and wood chips. Sprinkle the pomegranate seeds on top.

    Basmati rice tastes good with it.
