Ingredients

  • 4 Veal cutlet (approx. 160 g each)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 2 Eggs (size M)
  • 100 g Flour
  • 100 g Breadcrumbs
  • 100 g clarified butter

Directions

    Wash the meat, dab dry and beat flat. Season meat with salt and pepper. Whisk eggs with a fork. Turn meat one after the other first in flour, then in egg and then in breadcrumbs

    Heat 50 g of clarified butter in two large pans and fry two escalopes on each side for about 2 minutes. Serve immediately
