Warm lamb's lettuce with chicken fillet skewers

Ingredients

Servings: 4
  • 2 Chicken fillets (approx. 150 g each)
  • 100 g Lamb's lettuce
  • several sheets Radicchio salad
  • 1 Pear
  • 1 Onion
  • 4 TABLESPOONS Sunflower oil
  • 2 TABLESPOONS Sugar
  • 2 TABLESPOONS Balsamic vinegar
  • 100 ml Orange juice
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 4 wooden skewers

Directions

    Wash the meat, dab dry and cut into 1 cm wide cubes. Put the cubes on 4 skewers. Wash lamb's lettuce and shake dry. Wash and clean the radicchio and cut into fine strips. Wash and quarter the pear, remove the core.

    Cut quarters into columns. Peel and finely chop the onion.

    Heat 2 tablespoons of oil in a frying pan. Brown the onion in it, caramelise with sugar and deglaze with vinegar and orange juice. Fold in pear, lamb's lettuce and radicchio.

    Heat 2 tablespoons of oil in a frying pan and fry the skewers for about 5 minutes, turning them over. Season with salt and pepper. Arrange meat skewers and salad on plates. Add the rest of the dressing.
