Peel, wash and slice the potatoes and carrots. Clean, wash and slice the spring onions. Mix vegetables and season with salt, pepper and thyme. Spread the vegetables on 4 large greased pieces of parchment paper.
Cut the sheep's cheese into cubes and spread on the vegetables. Close the packet and bake in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 30-35 minutes. Serve garnished with basil and thyme.
