Vanilla pudding with fruits and beaten egg whites

Ingredients

  • 1 can(s) (425 ml) Apricots
  • 375 g Strawberries
  • 75 g Sugar
  • 2 Eggs (size M)
  • 1/2 l Milk
  • 1 package Pudding powder "Vanilla Flavor"
  • 1 package Vanillin sugar
  • 1 TEASPOON Lemon juice
  • 15 g flaked almonds
  • 1 TEASPOON Icing sugar
  • 7-10 Tbsp Melissa

Directions

    Drain the apricots and cut them in half. Wash the strawberries, dab dry and clean. Halve or quarter strawberries, depending on size. Mix with a tablespoon of sugar and apricots. Separate the eggs. Mix 4 tablespoons of milk, egg yolk, custard powder and 2 tablespoons of sugar. Bring the rest of the milk to the boil, remove from the heat and add the pudding powder while stirring.

    Bring to the boil again briefly and place in 4 ovenproof moulds rinsed with cold water. Pour the fruit onto the pudding. Prepared like this, the dessert can stand for some time. Just before serving, beat the egg whites until stiff and stir in the remaining sugar, vanillin sugar and lemon juice. Use a spoon to spread the beaten egg whites over the fruit. Sprinkle with flaked almonds and bake in a preheated oven (electric range: 200 °C/ gas: level 3) for 5-8 minutes. Sprinkle with icing sugar and serve immediately decorated with lemon balm
