Vanilla milk rice with fruits

Ingredients

  • 1/8 l low-fat milk
  • 1 pinch Salt
  • 1/4 Vanilla pod
  • 30 g Round grain rice
  • 7-10 Tbsp liquid sweetener
  • 60 g cleaned strawberries
  • 3 (60 g; glass; for diabetics) Apricot halves
  • 100 g Low-fat curd
  • 7-10 Tbsp Mint

Directions

    Put milk, 5-7 tablespoons (75 ml) water, lemon peel and salt in a small pot. Cut the vanilla pod open lengthwise, scrape out the pulp and add both to the milk. Bring to the boil, stir in the rice, cover and allow to swell over a low heat for about 30 minutes. Remove the pot from the stove. Season rice with sweetener and let it cool down

    Wash the strawberries and cut into slices. Dice the apricots. Remove the pod and lemon peel from the rice. Stir in the quark and carefully fold in the fruit. If necessary, season again with sweetener. Possibly decorate

    A delicious and inexpensive alternative to real vanilla is liquid vanilla flavour. It is sugar-free and therefore particularly suitable for diabetics. In season, rice pudding tastes delicious with rhubarb. Steam rhubarb pieces in a little water and season with sweetener
