Ingredients

  • 300 g Flour
  • 175 g Butter
  • 250 g Sugar
  • 1 pinch Salt
  • 4 Eggs (size M)
  • 1 (approx. 200 g) untreated orange
  • 1 Vanilla pod
  • 250 g Schmand
  • 2 packages Pudding powder "Vanilla Flavor"
  • 8 Apples (approx. 200 g each; e.g. Elstar)
  • 100 g Orange marmalade
  • 7-10 Tbsp Fat and flour
  • 7-10 Tbsp Cling film

Directions

    Knead the flour, butter in pieces, 150 g sugar, salt and 1 egg first with the dough hooks of the hand mixer, then quickly with your hands to a smooth dough. Wrap in foil and chill for about 30 minutes. Wash the orange, rub dry and rub the peel. Squeeze the juice. Cut the vanilla pod in half lengthwise and scrape out the vanilla pulp.

    Mix sour cream, 100 g sugar, vanilla pulp, 3 eggs and pudding powder with the whisk of the hand mixer until smooth. Peel apples, remove core with the apple cutter. Drizzle apples with orange juice. Grease a springform pan (26 cm Ø) and dust with flour. Roll out the short pastry on a floured work surface until round (approx. 32 cm Ø). Line a springform pan with dough, pressing the rim 4-5 cm high. Spread apples on top and pour over the pastry. Bake the cake in a preheated oven (electric range: 175 °C/ convection oven: 150 °C/ gas: level 2) for 60-70 minutes. Remove the cake from the edge, place on a cake rack and let it cool down for about 30 minutes. Remove the edge of the springform pan.

    Line a springform pan with dough, pressing the rim 4-5 cm high. Spread apples on top and pour over the pastry. Bake the cake in a preheated oven (electric range: 175 °C/ convection oven: 150 °C/ gas: level 2) for 60-70 minutes. Remove the cake from the edge, place on a cake rack and let it cool down for about 30 minutes. Remove the edge of the springform pan. Heat up the jam in a small pot. Brush the surface of the cake with a brush and let it cool down
