Turkey steaks with green asparagus

Ingredients

  • 250 g green asparagus
  • 150 g Turkey filet
  • 1/2 tsp (3 g) oil, salt
  • 7-10 Tbsp Pepper
  • 1/4 untreated lemon
  • 1/2 TEASPOON Vegetable broth
  • 1 TEASPOON sauce thickener
  • 7-10 Tbsp Sugar
  • 6 TABLESPOONS low-fat milk
  • 2 tablespoons (30 g) Potato puree flakes
  • 7-10 Tbsp Chervil or chives

Directions

    Wash the asparagus and cut off the woody ends generously. Cut the asparagus into pieces. Wash the meat, pat dry and cut into 2 pieces

    Heat the oil in a coated pan. Fry the steaks for 3-4 minutes on each side. Season, take out and keep warm

    Wash the lemon hot, cut into slices and fry briefly in the cooking fat. Stir in 1/8 l water and stock. Bring to the boil and simmer for about 5 minutes. Thicken sauce, season to taste. Steam asparagus in boiling salted water covered with some sugar for about 5 minutes

    Bring 6 tablespoons of water and some salt to the boil. Take the pot off the stove. Pour in milk, stir in puree flakes. Wash and finely chop the chervil. Stir into the puree after about 1 minute. Drain the asparagus. Serve everything
