Ingredients

Servings: 4
  • 1 Onion
  • 1 Garlic clove
  • 1 TABLESPOON Olive oil
  • 400 g mixed minced meat
  • 1 red pepper
  • 50 g black olives without stone
  • 2 TABLESPOONS Tomato paste
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Cumin
  • 7-10 Tbsp Cayenne pepper
  • 1/2 bunch Thyme
  • 150 g Couscous
  • 500 g Whole milk yoghurt
  • 3 Eggs (size M)
  • 4 Tomatoes
  • 1 collar Spring onions
  • 7-10 Tbsp Grease

Directions

    Peel onion and garlic. Cut the onion into fine cubes. Press garlic through a garlic press. Heat oil in a pan and fry onion and garlic until transparent. Add minced meat and fry until crumbly. Meanwhile clean, wash and dry the bell peppers.

    Cut the bell peppers into fine cubes. Cut olives into fine rings. Stir tomato paste into the minced meat. Season with salt, cumin and cayenne pepper. Stir in paprika and olives. Wash the thyme, dab dry and, except for a few stems for garnishing, pluck leaves from the stems. Fold the thyme into the chopping mixture. Mix the couscous with 300 ml boiling water and let it swell for about 5 minutes. Mix yoghurt and eggs and stir into the couscous. Season with salt, pepper and cumin. Wash, clean and slice the tomatoes. Clean and wash spring onions and cut in half lengthwise.

Add 1/3 of the couscous mixture and spread evenly. Cover with spring onions and spread another 1/3 of the couscous mixture on top. Cover with tomato slices (put some aside for garnishing) and spread the rest of the couscous mixture on top. Garnish with tomato slices and thyme. Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for about 1 hour

Cover with tomato slices (put some aside for garnishing) and spread the rest of the couscous mixture on top. Garnish with tomato slices and thyme. Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for about 1 hour
