Ingredients

  • 1 kg small new potatoes
  • 1 Branch rosemary
  • 2 Garlic cloves
  • 1 TABLESPOON coarse salt
  • 3 TABLESPOONS Olive oil
  • 1 big apple
  • 2 Onions
  • 100 g Whipped cream
  • 150 g Whole milk yoghurt
  • 3 TABLESPOONS Salad Mayonnaise
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar
  • 1 Banana
  • 2 TABLESPOONS Lemon juice
  • 200 g Schmand
  • 7-10 Tbsp Curry
  • 100 g streaky smoked bacon
  • 2 TABLESPOONS Oil
  • 4 Matjes fillets nature
  • 4 Herb matjes fillets
  • 4 Red wine matjes fillets
  • 7-10 Tbsp Lemon and dill

Directions

    Wash the potatoes thoroughly and cut in half. Wash the rosemary, pluck the needles from the twig. Crush garlic, coarse salt and rosemary in a mortar. Stir in olive oil. Marinate the potatoes in it. For the housewife sauce, wash the apple, quarter it and cut out the core.

    Cut apple quarters into small pieces. Peel and quarter 1 onion and cut it into slices. Whip cream until semi-stiff. Mix yoghurt and mayonnaise. Season with salt, pepper and sugar. Fold in cream, apples and onion. For the curry sauce peel the banana and mash it with a fork. Sprinkle with lemon juice. Mix sour cream and banana, season with curry, salt and pepper. For the bacon sauce peel 1 onion and chop finely. Cut the bacon into small cubes. Heat oil in a pan.

Add 1/8 litre of water, bring to the boil and cook over a low heat for about 15 minutes (add a little more water if necessary). Arrange the maties on a plate, garnish with lemon and dill. Add sauces in small bowls and potatoes

    Skip the bacon. Add onion and fry lightly, remove. Put potatoes in a hot pan. Add 1/8 litre of water, bring to the boil and cook over a low heat for about 15 minutes (add a little more water if necessary). Arrange the maties on a plate, garnish with lemon and dill. Add sauces in small bowls and potatoes
