Tagliolini with bean-lemon sauce and bacon

Ingredients

  • 1 Organic Lemon
  • 6 TABLESPOONS Olive oil
  • 1 Onion
  • 2 Garlic cloves
  • 100 g Bacon
  • 2 can(s) (425 ml each) Cannellini (white beans)
  • 300 ml Vegetable broth
  • 400 g Tagliolini (durum wheat semolina pasta with saffron)
  • 7-10 Tbsp Salt
  • 5 Stem(s) Parsley
  • 5 Stem(s) Basil
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar

Directions

    Wash the lemon hot, grate dry and finely grate the peel. Halve the lemon, squeeze the juice. Mix 4 tbsp. oil, half of the lemon juice and peel

    Fry the bacon in a pan without fat until crispy, remove. Rinse beans in a sieve with cold water and drain well. Peel and chop onion and garlic. Heat 2 tablespoons of oil in a saucepan, fry the onion and garlic in it. Add the beans and fry briefly. Deglaze with remaining lemon juice and broth. Bring to the boil, cover and simmer for 5-8 minutes

    Meanwhile, prepare the pasta in boiling salted water according to the instructions on the packet. Wash herbs, shake dry and pluck off leaves. Finely chop parsley. Cut basil into fine strips

    Take the beans from the stove in the pot and puree them finely with a blender. Season with salt, pepper and 1 pinch of sugar. Crumble the bacon roughly. Drain the noodles and let them drain. Arrange noodles with bean sauce, herbs and bacon on a plate. Drizzle with lemon oil
