Tagliatelle with peppers and tomatoes

Ingredients

  • 2 small yellow pepper
  • 1 Onion
  • 500 g ripe tomatoes
  • 2 TABLESPOONS Olive oil
  • 1 TEASPOON Tomato paste
  • 100-150 ml Vegetable broth
  • 400 g Tagliatelle Noodles
  • 7-10 Tbsp Salt
  • 7-10 Tbsp coarse pepper
  • 30 g Parmesan cheese

Directions

    Halve, clean and wash the peppers. Halve paprika halves and cut into thin strips. Peel and halve the onion and cut into thin strips. Carve tomatoes crosswise, blanch with boiling water, let it stand for a short time.

    Quench tomatoes, peel skin. Quarter the tomatoes and cut the flesh into small cubes. Heat oil in a pan. Sauté the onion for 1-2 minutes, then add the diced tomatoes and tomato paste.

    After about 5 minutes add the stock and simmer for about 20 minutes. Prepare noodles in boiling salted water according to package instructions. Approx. 10 minutes before the end of the cooking time, add strips of paprika to the sauce and season with salt and pepper.

    Parmesan shavings. Arrange tagliatelle with sauce on plates. Sprinkle with coarse pepper and parmesan.
