Ingredients

  • 250 g Bread from the previous day (e.g. baguette)
  • 1/2 l Milk
  • 200 g Swiss mountain cheese
  • 250 g Onions
  • 4 Stem(s) Parsley
  • 50 g Butter
  • 1/2 l Vegetable broth
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp grated nutmeg

Directions

    Dice bread and soak in milk for about 1 hour. In the meantime grate cheese finely. Peel onions and cut into very fine rings. Wash parsley, shake dry and chop finely. Mix the soaked bread with the milk and cheese well. Heat butter in a pot and fry onions over low heat until translucent.

    Add bread-cheese-milk mixture. Pour in broth and bring to the boil while stirring constantly. Simmer at low heat for 2-3 minutes. Season to taste with salt, pepper and nutmeg. Arrange the soup in a terrine sprinkled with parsley
