Swedish apple sponge cake

Ingredients

  • 7 Apples (approx. 1 kg, e.g. Elstar)
  • 4 Eggs (size M)
  • 325 g Sugar
  • 120 g Butter
  • 125 ml Milk
  • 300 g Flour
  • 3 deleted Tsp Baking Powder
  • 1 TEASPOON Cinnamon
  • 75 g chopped almonds
  • 1 gestr. tbsp. icing sugar
  • 7-10 Tbsp Fat and flour

    Wash, peel and halve apples, cut out the core and cut apples into slices. Beat the eggs and 250 g sugar with the whisk of the hand mixer until thick and frothy (at least 5 minutes). Bring butter and milk to the boil and run hot into the beaten egg mixture. Stir in

    Mix flour and baking powder, sieve in portions onto the egg mixture and carefully fold in with a whisk. Pour the thin dough into a greased, floured oven pan (32 x 39 cm), smooth it down if necessary

    Mix 75 g sugar and cinnamon. Spread apple slices evenly on the sponge cake. Sprinkle with cinnamon-sugar mixture and almonds. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 25-30 minutes

    Remove from the oven, place on a cake rack and allow to cool. Dust with icing sugar, cut into pieces and serve. Whipped cream tastes good with it
