Ingredients

Servings: 4
  • 1/4 l Milk
  • 500 g Flour
  • 30 g fresh yeast
  • 60 g Sugar
  • 1 pinch Salt
  • 7-10 Tbsp grated rind of 1/2 organic lemon
  • 60 g soft butter or margarine
  • 4 Eggs (size M)
  • 100 g Sultanas
  • 1 1/4 l vegetable oil or 1,25 kg frying fat
  • 1-2 TABLESPOONS Icing sugar for dusting

Directions

    Gently warm up about 75 ml of milk. Put flour into a bowl, press a hollow in the middle and crumble the yeast into the hollow. Add 1 tablespoon (15 g) sugar and lukewarm milk and mix with some flour from the rim to a thick mash. Cover and leave to rise in a warm place for 15-20 minutes

    Heat 175 ml of milk slightly. Add milk, 45 g sugar, salt, lemon peel, fat, eggs and sultanas to the pre-dough. Knead with the dough hooks of the hand mixer for 4-5 minutes to a loose yeast dough. Cover and leave to rise in a warm place for 30-40 minutes

    Heat oil or fat in a medium high pot. Use a teaspoon to cut off some of the dough and add it to the hot fat/oil using a second teaspoon. Bake about 8 pieces per portion in the hot fat/oil for about 3 minutes until golden brown. Lift out with a skimmer and let it drip off on kitchen paper. Dust with icing sugar as desired
