Ingredients

Servings: 4
  • 3 medium-sized onions
  • 1 collar Coriander
  • 2 Garlic cloves
  • 75 g dried tomatoes
  • 75 g unsalted peanuts
  • 3 TABLESPOONS Soy sauce
  • 100 g Spice sauce "sweet sour"
  • 1 (approx. 1.2 kg) Turkey thigh
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 3 TABLESPOONS Oil
  • 500 g Cutting beans
  • 1 collar (approx. 200 g) Spring onions
  • 100 g Shiitake mushrooms (Chinese mushrooms)
  • 7-10 Tbsp Kitchen yarn

Directions

    Peel the onions. Finely dice one. Wash the coriander, dab dry and chop coarsely, except for a few leaves for garnishing. Peel garlic. Grind the dried tomatoes, diced onions, coriander, garlic and peanuts finely in the universal chopper. Season to taste with soy sauce and 2 tablespoons of seasoning sauce. Remove the meat of the turkey leg from the bone.

    Wash the meat and pat dry. Season with salt and pepper and fill the meat with the peanut mixture. Roll up the meat and tie tightly with kitchen string. Place on a fat pan of the oven coated with a tablespoon of oil and cook in the preheated oven (electric cooker: 200 °C/ gas: level 3) for about 1 1/2 hours. Halve the remaining onions and add them after 10-15 minutes and pour on 1/2 litre of water. From time to time, baste the turkey leg with it. In the meantime clean and wash the beans, cut them into diagonal pieces and blanch them in boiling salted water for about 3 minutes. Quench the beans in cold water and let them drain. Clean, wash and cut spring onions into coarse rings. Clean, wash and dry shiitake mushrooms and cut them in half. Heat the remaining oil in a pan and fry the mushrooms and spring onions. Add the beans. Season with salt and pepper and stir-fry for about 5 minutes.

Add the beans. Season with salt and pepper and stir-fry for about 5 minutes. Remove the turkey leg from the oven and keep warm. Remove the onions from the sauce and stir in the remaining spicy sauce. Season to taste again if necessary. Arrange turkey leg with bean vegetables on a plate. Pour the sauce over it. Sprinkle with remaining coriander leaves
