Strawberry cake with chocolate biscuit

Ingredients

  • 100 g Dark chocolate
  • 3 Eggs (size M)
  • 250 g Sugar
  • 1 package Vanillin sugar
  • 1 pinch Salt
  • 100 g Flour
  • 15 g Cocoa powder
  • 2 TEASPOONS Baking Powder
  • 500 g Strawberries
  • 7-10 Tbsp juice of 1/2 lemon
  • 250 g Buttermilk quark
  • 7 sheets Gelatine
  • 500 g Whipped cream
  • baking paper

Directions

    ##Chocolate## roughly chop and melt over a warm water bath. Leave to cool a little. Separate the eggs. Beat the egg whites and 4 tbsp. cold water with the whisks of the hand mixer until stiff. Add 100 g sugar, vanilla sugar and salt. Stir in egg yolks one after the other.

    Stir in melted chocolate. Mix flour, cocoa and baking powder, sieve onto the egg mixture and fold in carefully. Line the bottom of a springform pan (26 cm Ø) with baking paper. Pour in the sponge mixture and smooth it down. Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for 25-30 minutes. Remove the sponge cake from the edge and let it cool down on a cake rack. Wash and clean ##strawberries##. Take the base out of the tin and remove the baking paper. Cut the base in half horizontally. Cover the bottom cake layer with a cake ring or the clean edge of a springform pan. Cut the upper cake layer into 12 cake pieces. Mix quark, 150 g sugar and lemon juice. Dissolve gelatine at low heat. Stir 2-3 tbsp.

Mix quark, 150 g sugar and lemon juice. Dissolve gelatine at low heat. Stir 2-3 tbsp. quark mixture into the gelatine. Stir the mixed gelatine into the quark mixture and refrigerate. As soon as the mixture begins to gel, whip cream until stiff and fold in. Spread some cream on the base and smooth it down. Spread strawberries on top and add the rest of the cream. Spread the cream evenly and place the top pieces of the cake base on top. Chill the cake for about 5 hours. Sprinkle with icing sugar before serving

Spread strawberries on top and add the rest of the cream. Spread the cream evenly and place the top pieces of the cake base on top. Chill the cake for about 5 hours. Sprinkle with icing sugar before serving
