Wash, clean and halve the strawberries. Wash lemon balm, shake dry and pluck. Put the leaves aside. Finely chop the rest. Mix strawberries with 1-2 tbsp. sugar and lemon balm.
Mix mascarpone, curd and lime juice. Season to taste with 1-2 tablespoons of sugar. Layer mascarpone quark and sugared strawberries in glasses. Decorate with the rest of lemon balm and balsamic cream.
