Steam noodles with baked fruit compote

Ingredients

Servings: 4
  • 2 Bag (à 200 g) fruit mix (dried soft fruits)
  • 500 g Flour
  • 145 g Sugar
  • 1 pinch Salt
  • 7-10 Tbsp grated zest of 1 organic lemon
  • 70 g Butter
  • 30 g fresh yeast
  • 500 ml Milk
  • 2 Eggs (size M)
  • 1 Cinnamon stick
  • 1 package Vanillin sugar
  • 2 TABLESPOONS Lemon juice
  • 7-10 Tbsp 15-20 g starch
  • 1 TABLESPOON Icing sugar
  • 7-10 Tbsp Flour

Directions

    Put the fruit mix in a bowl and pour 1 litre of boiling water over it. Put flour, 100 g sugar, salt, about half of the lemon rind and 50 g butter in flakes into a large mixing bowl. Press a depression in the middle, crumble yeast into it. Warm 250 ml milk lukewarm. Pour some milk over the yeast and stir. Dust with flour from the edge, cover and leave to rise in a warm place for about 20 minutes

    Warm the remaining milk lukewarm and add to the pre-dough. Add eggs and knead well. Cover and leave to rise for another 40 minutes in a warm place. With floured hands form about 8 dumplings of the same size

    Bring 250 ml milk, 20 g sugar and 20 g butter to the boil in a wide saucepan. Place the dumplings carefully side by side. Wrap a damp tea towel around the lid, place the lid firmly on the pot so that no steam can escape. Cook on a low heat for 30-40 minutes until the milk has just boiled over. Approx. 5-10 minutes before the end of the cooking time, check that the steamed pasta does not start to set

    In the meantime, pour the fruit mixture into a sieve, collecting the liquid. Boil up the liquid, cinnamon stick, vanillin sugar, lemon juice, remaining lemon peel and 25 g sugar. Stir starch and 4-5 tbsp. water until smooth. Stir the starch into the boiling liquid, bring to the boil while stirring, simmer for about 1 minute and fold in the fruit. Pour into a bowl and let cool

    Steam noodles and some compote on plates, dust with icing sugar. Add the rest of the compote
