Spicy fried rice with prawns

Ingredients

Servings: 4
  • 250 g Rice (e.g. jasmine rice)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 250 g raw peeled shrimps (fresh or frozen)
  • 400 g Fish fillet (e.g. saithe or pangasius)
  • 4 Garlic cloves
  • 1 collar Spring onions
  • 2 Tomatoes
  • 1 Cucumber
  • 4-5 Stem(s) Coriander
  • 2-3 TABLESPOONS Oil
  • 3 TABLESPOONS Fish or soy sauce
  • 6 TABLESPOONS sweet-hot chili sauce

Directions

    put rice in approx. 1/2 l boiling salted water, cover and let it swell at mild heat for approx. 20 minutes, then let it cool

    Defrost frozen shrimp. Cut the prawns in the back, remove the dark intestine. Rinse fish and prawns, dab dry. Cut fish into bite-sized pieces

    Peel and chop the garlic. Clean, wash and chop the spring onions. Wash tomatoes, cut into slices. Cucumber clean, peel, halve and cut into bite-sized pieces. Wash coriander, pluck off leaves

    Heat the oil in a wok or large frying pan. Fry the prawns and fish for 2-3 minutes while turning. Season with salt and pepper, remove

    Fry the spring onions, garlic and rice in a wok while turning for about 2 minutes. Add the tomatoes and continue frying for 2-3 minutes. Stir in fish and chilli sauce. Add fish, shrimps and cucumbers, heat up. fold in coriander, season to taste
