Finely dice cheese and fat. Mix thoroughly with a fork. Drain mixed pickles and also dice finely. Wash parsley and chop finely, except for a stem for garnishing.
Add mixed pickles and parsley to the cheese mixture. Season with caraway or lemon pepper to taste. Knead with your hands and form into small balls. Arrange on a plate and chill briefly.
To serve, garnish with some mixed pickles and parsley. Pumpernickel tastes good with it.
