Spanish potato pan with chorizo

Ingredients

  • 1.2 kg Potatoes
  • 250 g Chorizo (Spanish pepper sausage)
  • 1 red chilli pepper
  • 8 Shallots or small onions
  • 2-3 TABLESPOONS Oil
  • 1 collar Chives
  • 7-10 Tbsp salt and pepper

Directions

    Cover the potatoes and boil them in water for about 20 minutes. In the meantime peel the skin off the sausage, cut the sausage into slices. Clean the chilli, carve lengthwise, remove seeds, wash and cut into fine rings.

    Peel the shallots and halve or quarter them depending on size.

    Potatoes cold quench, peel and let cool down a little. Cut the potatoes into slices.

    Heat the oil in a very large or two pans. Fry the slices of sausage until crispy, turning them over and taking them out. Fry the potatoes in hot frying fat for about 10 minutes until golden brown. After 5 minutes add shallots and chilli and continue frying.

    Fold in sausage and warm up briefly.

    Wash the chives, dab dry and cut into fine rolls. Season fried potatoes with salt and pepper. Sprinkle with chives.
