Spaghettini with lemon-salmon sauce

Ingredients

Servings: 4
  • 300 g leaf spinach
  • 1 medium onion
  • 1-2 Garlic cloves
  • 400 g Spaghettini (dünne Spaghetti)
  • 7-10 Tbsp salt, white pepper
  • 1-2 TABLESPOONS oil, 1/4 l milk
  • 100 g Whipped cream
  • 75 g Cream cheese with herbs from Provence
  • 1-2 TABLESPOONS sauce thickener
  • 150 g smoked salmon
  • 1 TABLESPOON Lemon or lime juice
  • 7-10 Tbsp Slices of lime

Directions

    Clean, wash and drain the spinach. Peel onion and garlic. Chop both finely

    Cook the pasta in plenty of boiling salted water for about 8 minutes

    Fry the onion and garlic in hot oil. Add the spinach and fry briefly. Add milk and cream, heat up. Stir in cheese and let it melt. Bring to the boil and thicken

    Cut salmon into strips and fold into the sauce. Season with salt, pepper and lemon juice

    Drain the pasta and serve with the sauce. Garnish with lime slices if desired

    Noodles should always be served hot: therefore do not rinse off and best mix immediately with the sauce
