Semolina foam with apple compote

Ingredients

  • 100 g cored apple
  • 1-2 TEASPOONS Lemon juice
  • 7-10 Tbsp liquid sweetener
  • 1/2 Vanilla pod
  • 1/8 l low-fat milk, 1 pinch of salt
  • 1 (20 g) easy go. tablespoon semolina
  • 1 fresh egg (Gr. S)
  • 1/2 TEASPOON crushed pistachios
  • 7-10 Tbsp or almonds
  • 7-10 Tbsp Mint

Directions

    Wash apple, cut into pieces. Steam covered with 5 tablespoons of water and lemon juice for about 5 minutes. Season to taste with sweetener. Cooling

    Cut the vanilla pod lengthwise and scrape out the pulp with a knife. Bring milk, salt, vanilla pulp and pod to the boil. Remove the pot from the stove. Stir in semolina and let it swell covered for about 5 minutes. Remove the vanilla pod. Season semolina with sweetener

    Separate the egg. Stir the egg yolk into the hot semolina. Beat egg white until stiff and fold in. Serve with the apple compote. Decorate with pistachios and possibly mint

    In this way, the remaining vanilla pod can be used to produce a real "vanilla sugar" suitable for diabetics: Cut open the pod and scrape out the pulp. Fill both with about 100 g fructose or diabetic sweetener into a screw glass. Keeps dry, dark and cool for about 6 months
